Recipe corner
One of the reasons I post recipes here is not only to share, but also to remember my creations for future reference... All quantities are approximate and can be adjusted according to taste and what you have on hand. The recipe multiplies well -- I made a whole vat of this tonight with the 5 pounds of mushrooms Derek brought home from work.
Lazy "Gourmet" Mushroom Soup
1 cup stock (I used homemade stock I had in the freezer, which I guess doesn't quite qualify as "lazy" -- I suppose storebought stock would be more in the spirit here. Use vegetable stock or water for a vegetarian soup.)
3-5 dried mushrooms (any type)
1-2 Tablespoons oil and/or butter for sautéing
1 large or 2 small onions
1 celery stalk
1 pound mushrooms
2 cloves garlic, minced (minced garlic out of a jar works well if you're seriously lazy like me)
Salt, to taste (depends on how salty your stock is)
Fresh ground black pepper, to taste
A dash of Worcestershire sauce (omit if you are a strict vegetarian)
A good splash of sherry or port
1 can cream of mushroom soup (I didn't have any milk or cream in the house. I had to improvise. This is the really lazy part.)
If you're feeling a bit fancier, some fresh minced parsley would be a nice addition at the end (optional).
1. In a small saucepan, heat the stock to boiling, then turn off the heat. Add the dried mushrooms to the hot stock, cover, and allow to soak and soften while you prepare the rest of the soup.
2. Mince the onion and celery in a food processor fitted with the chopping blade.
3. In a large saucepan, heat the oil and/or butter on medium for a minute or two, then add the minced onion, celery, and garlic, stir well, and saute for a few minutes, stirring occasionally, while you put the mushrooms through the coarse slicing disc in the food processor.
4. Add the sliced mushrooms to the pot and saute for a few more minutes.
5. Chop the softened dried mushrooms (you can do this in the food processor as well), and add them to the vegetables. Add remaining ingredients including stock, stir well (make sure to get the cream of mushroom all smooth and incorporated), and simmer 10-15 minutes. Voila -- mushroom soup that's fit for company! (Shh... don't tell them how easy and fast it was to make!)
